GUILT FREE CHOCOLATE CAKE
Okay, it is the weekend and if you are a chocolate lover like me there is no better way to treat yourself than with a chocolate cake. I know I shouldn't, but I do feel guilty when I eat too much cake, particularly when I don't know what is in the cake, and especially if I know it is laden with sugar or bad fats. Some time ago I looked for a recipe that is not only scrumptious, but also not half bad for you and I found this recipe, where I have made a few changes (coconut flour for plain flour, cacao for cocoa and honey/molasses for way too much sugar). Well, you have to treat yourself every now and then.
1½ cups coconut flour (or 3 cups plain flour)
5 tablespoons raw cacao
2½ teaspoons baking powder
1/4 cup coconut oil
1 ripe avocado, mashed until smooth
2 cups water
2 teaspoons vanilla extract
1/2 cup raw honey or organic molasses
2 ripe avocados, mashed until smooth
½ cup organic maple syrup or honey (sweetner)
½ cup raw cacao
Optional: To make it less healthy, but more like icing, replace the sweetner with 1 cup of icing sugar or less
Line two 20cm (9inch) baking tins with grease proof paper.
Preheat oven to 160°C (320°F).
In a large bowl, add the dry ingredients (flour, cacao and baking powder).
In a large jug bowl, whisk the coconut oil, egg, water, vanilla extract and honey(molasses). Then mix in the avocado.
Create a well in the centre of the dry ingredients and pour the liquid mixture into the well and combine.
Divide batter evenly between cake pans and place in the oven.
Bake both cakes ecking for doneness after 30 minutes.
To ice, allow cakes to cool in their tins completely.
Combine the ingredients for the frosting and spread on your cakes.
