THE EASIEST CREAMY FUSILLI FUNGI


Wow, it is icy cold today. Hope you have been able to keep the chill away.

Time for some comfort food, that is simple to make. This is a great weekday meal, when you just want to put something together really quick.

Ingredients

400g (14 oz) dried or fresh fusilli

400g (14 oz) swiss or white mushrooms, sliced

250g (9oz) mascarpone cheese

2 tablesp. Butter

¼ cup freshly grated parmesan

1 -2 tablesp. Chopped basil leaves (chopped)

50g (1¾oz) pine kernals

Serves: 4 people

Instructions

  1. Put the pasta in a pot of boiling water and cook until the pasta is al dente.

  2. If you like pine nuts and want to add them to the dish, cook over low heat until golden. Then transfer to a plate and set aside to cool.

  3. Using the same pan, melt the butter and then add the mushrooms. Cook for about 4 -5 minutes until tender.

  4. Pre-heat a large serving bowl.

  5. Drain the pasta once ready. Place in the large serving bowl along with the mushrooms, basil mascarpone and pine kernels. Stir well.

  6. Season with salt and pepper.

  7. Serve on four serving plates. Sprinkle the parmesan and some more basil.

Variation:

For the meat lovers, why not cook up some chicken. Use approximately 400g of diced chicken. While the pasta is cooking, cook the chicken and then add along with the rest of the ingredients to the pasta. You may want to decrease the amount of mushrooms, when also adding chicken.

All you need to do now is to pour a nice glass of wine… and maybe some water for the kids,
