MAKE LUNCH EASY BY COOKING THIS SIMPLE MUSHROOM QUICHE


We are heading to the footy tomorrow and I like to bring food with us, rather buying unhealthy snacks. Sometimes sandwiches and rolls don’t cut it, so I often make something like a quiche. Great lunchtime meal, that you can have hot or cold. If we have it at home, I tend to serve it with a salad. When we are out and about, I cut the quiche into individual slices and instead of salad, we usually have pieces of fruit and of course, a little treat like some chocolate.

If you want something healthy for the family, but is easy to make, then give this a try.

Ingredients

23cm (9inch) pie base or enough short crust pastry to cover a 23cm (9inch) pie dish

2 tbsp. olive oil

450g (1 lb) mushrooms, quartered or cut into large chunks

1 onion, diced

3 large eggs

1/2 cup milk

1/2 cup heavy cream

340g (1 1/2 cups) Cheddar cheese, grated

Pinch of salt

Freshly ground pepper

Pinch nutmeg

Serves: 4 – 6 persons for lunch with side salad

Method

  1. Grease a 23cm pie dish and place the pie base (or the pastry sheets) in the pie dish. Trim the edges. Prick the pastry with a fork. Then line with grease proof paper and fill with baking beads or weights.

  2. Preheat oven to 180C (around 350°F).

  3. Bake blind by baking for 15 minutes. Then carefully remove the parchment, baking beads/weights and return the pastry to the oven for a further 5 minutes until lightly golden.

  4. Remove from oven and let it cool while you make the filling.

  5. Heat oil in a large pan over medium high heat. Sauté the diced onion until golden, then add the mushrooms. Sprinkle with salt and pepper. Cook for about 10 minutes until the mushrooms get brown.

  6. Sprinkle half of the grated cheese over the bottom of the cooked pastry. Spread the mushrooms and onion mixture over the cheese, and then sprinkle the remaining cheese over the mixture.

  7. Whisk together the eggs, cream, milk and nutmeg in a bowl. Pour the egg mixture over the mushrooms, onion and cheese in the pastry case

  8. Bake for about 30 – 35 minutes or until the centre is just set (use a skewer to check).

  9. Remove from the oven and cool for about 15 - 20 minutes before slicing.
