HOME COMFORT IS EASY WITH THIS UPSIDE DOWN PINEAPPLE CAKE


I thought I should share this recipe with you as it is so easy. I whip it together when I have little time, but the family are longing for dessert or something sweet. You can have it hot or cold, served with ice-cream or cream. I’m you are looking for simple that allows you to have time to do other things.

Ingredients

2 tablesp. Brown sugar

10 – 20g (approx. ¾ oz) butter, melted

440g (14oz) pineapple slices in natural juice

½ cup milk

90g (3.2 oz) butter

90g (3.2 oz) castor sugar

1 cup self-raising flour

2 eggs lightly beaten

1 teasp. vanilla essence

Serves: 8 - 10 people

Instructions

  1. Pre-heat the oven to 180°C (350°F).

  2. Drain the pineapple slices, retaining the juice

  3. Grease a ring tin (20cm/8 inches) with the melted butter. Then sprinkle the brown sugar over the butter to cover the base.

  4. Arrange the pineapple slices side by side on the base.

  5. Beat the butter and the sugar until light and creamy. While beating, add the eggs gradually. Also add the vanilla essence.

  6. Sieve the flour into another bowl. Using a metal spoon, gradually add the flour to the butter mixture, alternating with the pineapple juice and the milk. Ensure all ingredients are folded in. If the mixture is very thick, add more milk.

  7. Pour the mixture over the pineapple slices and place in the oven.

  8. Bake for 35 – 40 minutes, until a skewer come clean from the cake.

  9. Leave in the time for about 10 minutes before turning it out onto a serving plate.
