Easy peasy roasted salmon pesto


Looking for something easy to cook this weekend? Well, I think you might like this delicious, yet healthy roasted salmon pesto. My kids love this recipe, particularly when I serve it up with steamed vegetables and baked sweet potato with sour cream (I know, not so healthy, but tastes so good).

Why not give it a try!

Ingredients

4 pieces of Salmon

1 Chunky dips Pesto (I like the crunchyness of this, but use any pesto you prefer)

Vegetables of choice. My suggestions are:

One quarter – half a broccoli head , cut into florets

1 carrot, sliced

1 Zucchini, sliced

1 cup of snowpeas

4 small - medium size sweet potatoes

Light sour cream

Serves: 4 people

Instructions

  1. Heat the oven to 180°C (fan forced oven) or 200°C (no fan).

  2. If baking sweet potatoes place in the oven 25 minutes before the salmon (45 mins in total). It is a good idea to prick the skin with a fork and to place them on a baking tray.

  3. Lightly grease another baking tray and place the salmon pieces skin down on the tray.

  4. Coat the top of each salmon piece with the pesto dip.

  5. Place the coated salmon in the oven and cook for 20 minutes, until crispy on the outside.

  6. In the meantime, prepared the vegetables and place in a steamer. Start cooking once the salmon is in the oven for 10 minutes.

  7. Serve up a piece of salmon and a portion of vegetables and a baked potato on a plate for each person.
