SOME TIPS TO EASE THE STRESS OF PREPARING FOR CHRISTMAS PART 3

Want something nice to do with the kids? Why not make gingerbread men or a gingerbread house. It is a great way to show the kids how to bake and be creative with their icing. It doesn’t have to be perfect, but it is always fun. And if you are not the baking type, there are kits available at supermarkets and speciality food stores, that have the gingerbread pieces already made. All you have to do is ice.

 

 This is what we made two years ago. The kids were very proud of themselves as it didn't fall apart.

 

Then maybe give it as a gift.

 

Other things you can make are sweet treats or cakes, like Almond bread. I have been making this simple recipe with great success. It is so easy to make and it is ideal for Christmas presents, especially your kid’s teachers. Place in an airtight container and it can keep for a while.

 

Ingredients

3 Egg whites, free range & organic

4oz/113.4g Organic castor sugar (replace with organic stevia if preferred)

4oz/113.4g Organic plain flour, sifted

4oz/113.4g Unblanched whole almonds

 

Recipe

  1. Line a loaf tin with grease-proof paper (eco-friendly of course).Beat egg whites until stiff.

  2. Gradually beat in the sugar to form a meringue consistency.

  3. Fold in the sifted flour and whole almonds and then pour into the lined loaf tin.

  4. Bake in a moderate oven for 30 – 40 mins. Leave in the loaf tin to completely cooled.

  5. Wrap in foil and refrigerate for 1 – 2 days. Using a very sharp knife cut into wafer tin slices.

  6. Place on a lined baking tray and cook to dry out on 130C for about 45mins.

  7. Cool on a wire rack before placing in your airtight container.

  8. Decorate the container when gifting.
